SMALL RUMINANTS
Sheep and goat farming suited to mountain pastures, producing lamb and goat meat.

In Sheki, crop and livestock products are planned to be developed within a single chain, from production to processing and from fermentation to packaging.
Where the natural landscape of the Caucasus meets a modern agro-industrial approach.
Set on the southern slopes of the Greater Caucasus, the Sheki region offers a natural foundation for the project through its farming heritage, climatic diversity and regional transport links.

Nine stages, one chain. The entire process, from the moment raw produce leaves the field to the moment it reaches the market, is planned within a single complex.

Building an agricultural production base for garlic and onion.

Timely harvesting, with produce passed directly into the processing chain.

Sorting and cleaning to prepare raw produce for processing.

Primary and advanced processing that turns produce into a range of forms.

A process under controlled conditions that gives produce a new flavor, color and texture.
The stage that extends shelf life and lays the groundwork for powdered products.
Packaging tailored to market and storage requirements.
Preserving quality in cold and dry storage conditions.

A logistics chain for access to domestic and international markets.
Garlic and onion lead the crop side, while livestock completes the chain with meat products. Added value is created at the processing stages.

The core raw material. A base for both fresh produce and further processing.

The second core line. Raw material for dried, powdered and paste products.

A product that takes on a distinctive color, flavor and texture through long, controlled processing.

Fermented garlic- and onion-based products.

Dried garlic and onion. Long shelf life and easy transport.

Garlic and onion powders, garlic and onion pastes.

Lamb, goat and beef. Cut and packaged meat products.

From everyday produce to a high-value product.
Black garlic is a product with a distinctive texture, color and flavor, obtained through long processing under controlled temperature and humidity.
A process that adds new value to produce.
In the fermentation chamber, temperature, humidity and duration are held within defined limits. The process demands precision: product quality depends on stable conditions.

The complex's second production line: a meat production chain from pasture to sale.
Building on the mountain pastures and deep-rooted livestock tradition of the Sheki region, small ruminant and cattle farming, meat processing and sales are envisaged as a single chain.

Sheep and goat farming suited to mountain pastures, producing lamb and goat meat.

Housing and feeding of cattle and beef production.

Processing, livestock, storage and logistics functions are planned on a single site. The livestock zone is planned separately from the processing zone, with a sanitary buffer between them.
Crop growing and livestock complement each other: processing residues can become animal feed, and manure from livestock can be turned into bio-fertilizer and returned to the soil. This cycle is a potential development direction for the project.
The envisaged technological approach is built on measurable, repeatable quality at every stage.
Grading produce by size and quality.
Stable, repeatable process conditions at every stage.
Control over temperature, humidity and time.
Managed reduction of moisture.
Solutions tailored to market and storage requirements.
Temperature control from production to delivery.
Inspection points from raw material to finished product.
Continuous tracking of process parameters.
Systematic monitoring of animal health and welfare.
Tracing each product's origin from field and farm to sale.
The aim is to bring local produce, in value-added form, first to the national market, then to the region and international markets.
It is an integrated production ecosystem that brings together agriculture, livestock, processing, biotechnology and logistics.
